Italian inspired omelet with fresh basil, roasted sweet peppers and VitaliteTM Plant-Based Grated Parmesan Style.

Ingredients

  • 1 tbsp Olive oil
  • Two green onions, chopped, (reserve the green ends for garnish)
  • 1 Red pepper, diced
  • 1 clove garlic, chopped
  • 4 eggs beaten
  • ¼ cup Fresh torn basil leaves or 1 tsp dried basil (reserve a few leaves for garnish)
  • 1 tsp Worcestershire sauce
  • ¼ cup water
  • 3/4 cup VitaliteTM Plant-Based Grated Parmesan Style

Directions

  1. Preheat a medium nonstick oven proof pan with olive oil on medium heat. Also, preheat your oven broiler
  2. Sauté onions, peppers, and garlic until softened and aromatic, about 5 minutes. Meanwhile, beat eggs vigorously with basil, Worcestershire sauce, salt, pepper, water, and ½ cup of the VitaliteTM Plant-Based Grated Parmesan Style.
  3. Pour in egg mixture, spreading it to all edges of the pan, stirring gently. Remove from heat.
  4. Top the mixture evenly with the remaining ¼ cup VitaliteTM Plant-Based Grated Parmesan Style.
  5. Place the pan on the second shelf below broiler and cook until the top is golden, and the mixture is light, puffy, and cooked, about 3 minutes.
  6. Garnish with a fresh basil and green onions.
  • Serve with good toasted crusty bread like ciabatta or sourdough.
  • Easily double the recipe to serve 4
  • Great for breakfast, brunch, or lunch.
  • Delicious served cold or at room temperature like they do in Italy and Spain!
