Portabella Mushroom Burger

Grilled Portabella mushroom Cheddar flavored burger with grilled red onions and Green Goddess dressing

Ingredients

  • 2 tbsp oil and vinegar, or Italian dressing
  • 1 tbsp olive oil
  • 2 Medium sized Portabella mushrooms
  • ¼ small red onion, thinly sliced
  • 2 slices VitaliteTM Plant-Based Cheddar Style Slices
  • 2 Brioche buns
  • Green Goddess Dressing
  • Sliced tomato and pickles

Directions

  1. Remove the stem from each mushroom and lay them with them cap side down on a lightly oiled baking sheet. Place the onions on top of each mushroom. Season with salt and pepper
  2. Drizzle the dressing evenly over the 4 mushrooms and onions. Cover with food wrap and marinate for an hour at room temperature.
  3. Pre-heat an oven to 400°F.
  4. Drizzle olive oil on the mushrooms and red onions and bake for 15-20 minutes uncovered, until tender. (For a more caramelized charred texture, put the mushrooms under the broiler for a few minutes)
  5. Top the mushroom with a VitaliteTM Plant-Based Cheddar Style slice during the last minute of cooking to melt the cheese lightly. Toast your buns during this last minute as well.
  6. Spread a little Green Goddess dressing on the bottom bun. Top with the cheesy mushroom and onion, then tomato and pickle slices. Drizzle more Green Goddess dressing. Put the bun on top and enjoy!
