Cheesy Vegan Potato Skins
Jazz Duke's Cheesy Vegan Potato Skins
Ingredients
4 russet potatoes
1/2 cup Vitalite™ Plant-Based Cheddar Style Shreds
1/2 cup Vitalite™ Plant-Based Mozzarella Style Shreds
1/3 cup chopped vegan bacon
1/3 cup chopped green onions
1/2 tsp sea salt
1 tbsp olive oil
1/4 tsp onion powder
1/4 tsp garlic powder
Creamy Dill Dip:
1 container Vitalite™ Plant-Based Creamy Original Spread
1/3 cup plant-based milk
1/4 cup fresh dill
1 tsp onion powder
1 tsp garlic powder
1/2 tsp sea salt
1/2 tsp black pepper
Directions
Rub potatoes with olive oil and sprinkle a pinch of sea salt.
Bake potatoes in the oven at 400° F for 40 minutes.
Cut baked potatoes in half and scoop out the insides into a bowl.
Add potato skins to the oven and bake at 400° F for 15 minutes.
Top each potato skin with Vitalite™ Plant-Based Cheddar Style Shreds, Vitalite™ Plant Based Mozzarella Style Shreds and vegan bacon.
Bake in the oven at 400° F for 15 minutes.
Prepare dip by combining the Vitalite™ Plant-Based Creamy Original Spread, plant-based milk, fresh dill and seasonings.
Remove potato skins from the oven and top with freshly chopped green onions.
