Cheesy Vegan Potato Skins

Jazz Duke's Cheesy Vegan Potato Skins

Ingredients

  • 4 russet potatoes
  • 1/2 cup Vitalite™ Plant-Based Cheddar Style Shreds
  • 1/2 cup Vitalite™ Plant-Based Mozzarella Style Shreds
  •  1/3 cup chopped vegan bacon
  •  1/3 cup chopped green onions
  • 1/2 tsp sea salt
  • 1 tbsp olive oil
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder

Creamy Dill Dip: 

  • 1 container Vitalite™ Plant-Based Creamy Original Spread 
  • 1/3 cup plant-based milk 
  • 1/4 cup fresh dill 
  • 1 tsp onion powder 
  • 1 tsp garlic powder
  •  1/2 tsp sea salt
  • 1/2 tsp black pepper 

Directions

  1. Rub potatoes with olive oil and sprinkle a pinch of sea salt.
  2. Bake potatoes in the oven at 400° F for 40 minutes. 
  3. Cut baked potatoes in half and scoop out the insides into a bowl. 
  4. Add potato skins to the oven and bake at 400° F for 15 minutes. 
  5. Top each potato skin with Vitalite™ Plant-Based Cheddar Style Shreds, Vitalite™ Plant Based Mozzarella Style Shreds and vegan bacon. 
  6. Bake in the oven at 400° F for 15 minutes. 
  7. Prepare dip by combining the Vitalite™ Plant-Based Creamy Original Spread, plant-based milk, fresh dill and seasonings. 
  8. Remove potato skins from the oven and top with freshly chopped green onions. 
  9. Enjoy!
