Berto Calkins’ Tater Totchos Appetizer


Cheese sauce:
  • ¼ cup plant-based butter
  • ¼ cup flour
  • 1 cup plant-based milk
  • 1 cup Vitalite™ Plant-Based Cheddar Style Shreds
  • ¼ cup diced pickled jalapenos
  • ½ teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

Additional Ingredients:
  • 1 bag of frozen tater tots
  • Plant-based ground meat
  • Taco seasoning
  • Pico de gallo
  • Guacamole


  1. Heat frozen tater tots in the oven as directed on packaging. While tater tots are being heated, cook one package of your preferred plant-based ground meat as directed along with your favorite taco seasoning.
  2. Cheese sauce: In a medium size saucepan, heat plant-based butter under low heat. Once butter is melted, add 2 tablespoons of flour and mix. Add the remainder of flour and mix that in as well. Slowly add plant-based milk while mixing in between. This should result in a texture similar to mashed potatoes. Slowly add Vitalite™ Plant-Based Cheddar Style Shreds while continuing to stir mixture until fully melted. Add jalapenos, turmeric powder, garlic powder and salt and mix.
  3. Layer tater tots with planted-based ground meat, romaine, guacamole, plant-based sour cream, pico de gallo and cheese sauce.
