Ooey-gooey Vegan Mac-n-Cheese

This vegan mac n' cheese inspiration features a roux-based sauce made with flour, olive oil, almond beverage and a good helping of VitaliteTM Plant-Based Mozzarella Style Shreds for an added layer of flavor that’s packed with tangy goodness.

Ingredients

  • 2 cloves Garlic, minced
  • 2 Tbsp Olive Oil
  • 2 Tbsp All Purpose Flour
  • 1 ½ cups Almond Milk
  • 5 cloves Roasted Garlic
  • 1 Tbsp Nutritional Yeast
  • 4 cups Lumache, or other small shell typed pasta, cooked
  • ½ cup VitaliteTM Plant-Based Mozzarella Style Shred
  • Pinch Salt, Pepper, Parsley

Directions

  • In a large pan, sauté minced garlic in the olive oil until lightly browned.
  • Add flour and whisk together… cook 1 minute more.
  • Slowly add the almond milk while whisking to avoid making lumps.
  • Transfer to a blender with the roasted garlic and puree until smooth.
  • Return to pan, add the nutritional yeast and cook until thickened and smooth.
  • Season with salt and pepper as needed, then add the cooked pasta noodles and mix well.
  • Transfer to a cast iron skillet, top with VitaliteTM Plant-Based Mozzarella Style Shred and place in oven to melt.
  • Remove from oven and garnish with parsley.
