Middle Eastern Inspired Pita Pizza

with hummus, roasted peppers, olives, and VitaliteTM Plant-Based Mozzarella Style Shreds

Ingredients

  • 2 Greek Style Pita (8 inch)
  • 1 tbsp Olive oil
  • ½ tsp Dried Oregano or 1 tsp fresh
  • 2/3 cup Hummus
  • 10 Kalamata olives, pitted and cut in half
  • 1 Roasted or Sauteed red pepper, diced
  • 1 cup VitaliteTM Plant-Based Mozzarella Style Shreds
  • Extra Virgin Olive oil to drizzle
  • Freshly cracked black pepper.

Directions

  1. Pre-heat oven to 375°F.
  2. Spread olive oil evenly over both pitas and sprinkle with oregano.
  3. Using the back of a spoon, spread 1/3 cup of hummus on each pita, leaving a small border on the edges of the crust. Sprinkle half of the VitaliteTM Plant-Based Mozzarella Style Shreds evenly on top of the hummus.
  4. Sprinkle with olives and peppers.
  5. Sprinkle the remaining VitaliteTM Plant-Based Mozzarella Style Shreds on top and bake for 5 minutes until the cheese is melted.
  6. Before serving, drizzle with extra virgin olive oil and freshly cracked black pepper
Optional:
  • Add some additional texture and nutrients by garnishing with toasted nuts or seeds like pumpkin and sun flour seeds or walnuts, roasted almonds, or pistachios.
  • Olives can be replaced with marinated artichokes or roasted tomatoes, for a more subtle effect.
