Breakfast Egg Bites

Rebecca Doudak’s Cheesy Breakfast Egg Bites

Ingredients

  • 1 ¾ cup chickpea flour
  • ½ block tofu crumbled
  • ¼ cup nutritional yeast
  • ½ cup Vitalite™ Plant-Based Cheddar Style Shreds
  • 1 teaspoon salt
  • 1 teaspoon garlic
  • ½ teaspoon turmeric
  • 1 teaspoon pepper
  • ¼ cup chopped fresh basil
  • 1 ¾ cup water
  • ½ cup diced onion
  • ½ cup diced red pepper
  • ½ cup chopped kale or spinach
  • 1 teaspoon baking powder

Directions

  1. Combine all ingredients.
  2. Bake in a greased muffin tin for 45 minutes at 350 degrees. Or, if using a mini-muffin tin, bake at 350 degrees for 23 minutes.
  3. Enjoy!
