Heat olive oil in a large skillet and sprinkle with ¼ t salt. Place the sliced bread in the pan and toast on one side only.
Once bread is toasted, transfer the slices to a small sheet pan. Lay the slices of cheese on one half. Spread the aioli on the other half and top with the slices of pickle.
Place the pan under the broiler and heat just until the cheese has melted. Close the sandwich and serve immediately.
